Nutrient Packed Lentil Soup Recipe
Dec 19, 2024Lentil soup is a comforting and nutrient-packed dish that’s perfect for any season. This recipe takes a classic favorite and elevates it with ingredients chosen for their exceptional health benefits. Protein-rich lentils serve as the base, while fresh vegetables like onion, garlic, carrots, and celery add depth and essential vitamins. Bone broth provides a rich source of collagen and minerals, supporting joint and gut health. A dash of turmeric not only enhances the soup’s golden hue but also infuses it with powerful anti-inflammatory properties. This hearty and wholesome soup is as delicious as it is nourishing, making it a fantastic addition to your wellness routine.
Ingredients:
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 2 carrots, peeled and chopped
- 2 celery sticks, chopped
- 2 cloves garlic, minced
- 2 cups dry lentils, rinsed
- 1 14 oz can crushed tomatoes
- 6 C bone broth (may substitute with vegetable or chicken broth)
- 1/2 tsp cumin
- 1 tsp tumeric
- 1 1/2 tsp paprika
- 2 bay leaves
- 1 lemon (zest and juice)
- 1/4 tsp salt
- 1/4 tsp pepper
- parmesan cheese for topping (optional)
Directions:
- Heat oil in large pot. Add onion, carrots and celery. Cook 7-8 minutes
- Add garlic cloves and cook an additional 2 minutes.
- Add all remaining ingredients except lemon and salt.
- Cover and bring to a simmer. Simmer for 35-40 minutes until lentils are soft.
- Remove the 2 bay leaves.
- Using an immersion blender, blend slightly to thicken the soup while still leaving it chunky. Alternatively, remove 2 cups of soup, cool slightly then add to a blender. Blend and then return the soup to the pot.
- Add lemon juice and zest and the salt and pepper. Stir well
- Top with freshly grated parmesan cheese if desired.
