Matcha Overnight Oats Recipe

Start your day with a vibrant and nutrient-packed breakfast: Matcha Overnight Oats! This simple, no-cook recipe combines the earthy flavor of matcha with creamy Greek yogurt, hearty oats, and a touch of natural sweetness from honey. Chia seeds add a boost of fiber and omega-3s, while a topping of fresh blueberries and crunchy pumpkin seeds offers the perfect balance of sweetness and texture. Prepared the night before, this breakfast is as convenient as it is delicious, making it ideal for busy mornings or a grab-and-go option.

 

2 servings

Ingredients:

  • 1/2 C oats
  • 2 tsp chia seeds
  • 1 tsp matcha powder
  • 1/4 C plain greek yogurt
  • 1 tbsp honey or maple syrup
  • 2/3 C milk of choice
  • 1 C blueberries
  • 1/4 C pumpkin seeds

Directions:

  1. Combine dry ingredients (oats, chia seeds and matcha powder) in a bowl and stir to mix.
  2. Combine wet ingredients (yogurt, honey or maple syrup and milk) in a jar or other glass container. Mix well.
  3. Add the dry ingredients to the jar with the wet ingredients and mix well. 
  4. Stir in blueberries.
  5. Refrigerate the mixture several hours or overnight.
  6. Just before enjoying, top with pepitas or sprouted pumpkin seeds
  7. Enjoy!
