Lemon Protein Truffles Recipe

Ingredients:
- 1 C almond flour
- 32 g vanilla protein powder
- 1/4 C coconut flour
- 1/4 C granulated sugar
- zest and juice from one lemon
- 4 tbsp melted coconut oil
- pinch of salt
Directions:
- Combine almond flour, protein powder, coconut flour, and sugar in a bowl and stir to combine.
- Add lemon zest, lemon juice, coconut oil and salt to the bowl and mix until well combined.
- Roll dough into 1 inch balls.
- Optionally, roll the ball in a mixture of sugar and shredded coconut.
- Enjoy.
