Ingredients:
- 1/2 C fat-free cottage cheese
- 1/2 C unsweetened cocoa powder
- 1/4 C coconut sugar
- 1/4 C almond flour
- 2 large eggs
- 1 tsp espresso powder or instant coffee granules
- 1/2 tsp vanilla extract
- 1/4 tsp baking powder
- 1/4 C dark chocolate chips
- 1/4 C chopped walnuts
Directions:
- Preheat oven to 350°F. Prepare a small (approx 7 x 5 in) baking pan by spraying with avocado oil cooking spray.
- In a blender combine all ingredients except the chocolate chips and walnuts. Blend until smooth.
- Pour the blended mixture into the prepared pan and top with the chocolate chips and walnuts. Use a spoon to gently mix in the toppings.
- Bake for 20 - 25 minutes.
- Let the brownies cool about 10 minutes before enjoying.
