Ingredients:

1 banana

3 eggs

pat of butter

sprinkle of cinnamon

finely diced apple

chopped pecans

toasted coconut (optional)
Directions:

Combine banana and eggs in blender and blend about 30 seconds until smooth and airy.

Melt pat of butter in small pan over medium heat. Once butter is melted add egg mixture.

Cook over medium/low heat, stirring frequently until firm.
